Wagyu cattle will marbel 20-25% if raised properly with genetics like San'juuyon, compared to an angus that marbles at 6-8%. The quality of Wagyu is much higher grade than that of United States grade so they are graded on a Japanese scale of 1-12, the highest grade of angus would only grade a 5-6 in Japan, therefor Wagyu grade off the United States charts.
Keeping to our tradition, our cattle are free ranged with zero antibiotics or hormones. The Wagyu are grain finished when its appropriate to put the right amount of marbling and taste on your dinner table.
Don't let the marbling fool you, that is the highest level of Omega-3's and Omega 6's available in cattle, not only does it lend itself to a tender, delicious steak but its a healthier meat.
Wagyu will be offered shortly, as always we cut out the middle man to save you money. Our meat cuts will be USDA processed and offered to you straight from the ranch or the local farmers market.
